Let's "Go Caroling" Day!

You might say a carol a day keeps the Grinch away. Gather your friends and family, head outside and entertain your neighbors with songs of good wishes and cheer. Afterwards, enjoy a cup of hot chocolate and some cookies.

Toward the Winter Solstice

A Poem by Timothy Steel

Although the roof is just a story high,
It dizzies me a little to look down.
I lariat-twirl the rope of Christmas lights
And cast it to the weeping birch's crown;
A dowel into which I've screwed a hook
Enables me to reach, lift, drape, and twine
The cord among the boughs so that the bulbs
Will accent the tree's elegant design. . .

Brown Sugar & Spice Cookies

3/4 cup butter, softened
1-1/4 cup dark brown sugar
1 egg
2 tsp baking soda
1/2 tsp salt
1/2 tsp ginger
1/2 tsp cinnamon
2 cups flour

 Print Recipe

Instructions

Preheat oven to 375 degrees. Line 2 baking sheets with silicone baking mats or parchment paper. (Do not try these without that.) Set aside. In a large bowl, beat together butter and sugar with an electric mixer for 6 minutes. Add egg to the mixture and blend. Then add baking soda, salt, ginger, cinnamon, and flour. Blend just until combined. Using a cookie scoop or spoon, drop dough on prepared cookie sheets 2 inches apart. I used a 1½ Tbsp cookie scoop. Bake for 8-12 minutes until set. Remove cookies from baking sheets and allow to cool on a cooling rack. Makes 32 cookies.

Winter Sunshine

A Poem by John Burroughs

It is the life of the crystal,
the architect of the flake,
the fire of the frost,
the soul of the sunbeam.
This crisp winter air is full of it.
